Simple Caesar Salad Dressing

Today is just the kind of day where I feel like keeping things fresh and simple! I am also totally ready for summer and farmer’s markets and cookouts with friends!!!!

 Store bought dressings just don’t get it done and your friends will be so delighted when you whip up this homemade dressing for them the next time you get together.  It only takes a few minutes so this is really perfect for a last minute gathering, which all goes back to keeping a few basic things in your fridge and pantry like lemons, garlic, mayo, parmesan and olive oil.  (Okay, maybe you want to keep some anchovy fillets in that pantry as well, but that’s strictly optional.)

Ingredients:

  • 1/2 Cup of Olive Oil
  • 4-5 Cloves of fresh Garlic (minced)
  • 2 Lemons (juiced)
  • 2 Tbsp. of Mayo
  • 1 Anchovy Fillet (optional, but very good if finely minced/chopped)

Directions:

Whisk all the ingredients or shake them up in a jar.  You can prepare ahead of time and just before serving toss with your greens.  Top the salad with some croutons, parmesan, capers and fresh cracked pepper and there you have it…Easy!  Serves 4.
