There are many ways to make Souvlaki, which is basically meat on a skewer. As we made our way around the country of Greece, sampling every single possible type, we discovered it is always delish! I was reminded the other day, by my Souvlaki-loving husband that the great thing about cuisine in Greece (and I am sure other Mediterranean countries) is the simplicity of it. It is all local and fresh…At Bungalows Ingrid, we were given a bottle of olive oil which had just been pressed from their own olive trees on the property!

This is the first Souvlaki that we made while in Greece!
Here is my recipe for Souvlaki…You can actually use pork, chicken or lamb and it can be baked or grilled! I love when recipes are flexible that way!
Ingredients:
- 3 lbs. Meat (cut into large chunks)
- 1/4 cup Olive Oil
- 1 Tbsp Dried Oregano
- 3 Cloves Minced Fresh Garlic
- Juice of 1 1/2 Lemons (or Lime)
- 1/3 tsp. course salt
- 1/3 tsp. cracked black pepper
- 6 Skewers
Directions:
Place the ingredients for Marinade in a large Ziploc bag. Next, place the meat pieces in the bag to soak it all up for 30 minutes or so while you prepare your grill. Thread the marinated meat onto skewers and grill until done. If you prefer to cook in the oven, place the skewers on a baking sheet and bake at 400 degrees for 30 minutes or until done. Makes 6 Souvlaki.
