Texas Taco Turkey Chili

 

Growing up in the West (Colorado and Arizona) I just love smoky southwest flavors and various Chili recipes … This recipe is super quick and would be good with leftover roasted or smoked turkey too!

 

Ingredients:

  • 1 Chopped Onion
  • 2-3 Cloves Garlic (minced)
  • 2 Tbsp. Olive Oil
  • 1.5 lbs. Ground Turkey
  • 1 Can Hominy (drained and rinsed)
  • 1 Can Black Beans (drained and rinsed)
  • 1 Can White Navy Beans (drained and rinsed)
  • 1 Lg. Can Tomato Sauce
  • 1 Can Fire Roasted Stewed Tomatoes
  • 1 Lg. Chopped Fresh Tomato
  • 1/2 pack Chili Seasoning Mix
  • 1/2 pack Taco Seasoning Mix
  • 1 Tbsp. Onion Soup Mix
  • 2 Cups Water
  • 1/4 tsp. each of Turmeric, Coriander, Cumin

*Sour Cream, Shredded Cheddar, Chives (Additional Toppings if Desired)

*Serve with Cornbread

Directions:

Sauté the onion and garlic in olive oil in a large pot.  Next brown the ground turkey (or if you are using leftover turkey heat it through).  Add all the other ingredients and stir occasionally while bringing to a boil.  Reduce heat and simmer (about 20-30 min).  Salt and pepper to taste and top with your favorite toppings!
