Summer Rocket and Tomato Salad

SUMMER!  Farmers Markets.  Swimming Pools. Picnics. Fun. Fun. Fun.  Is there anything better than sitting outside on a dock with some friends watching the sun set?  Well, here is a super dish to take with you just about anywhere!  A fresh succotash of sorts, or maybe a medley.  I have been really into arugula lately (aka rocket) and whenever you mix in some fresh summer veggies, the result is wonderful…  This salad is perfect with any grilled meats, so get ready to hit the farmers markets, fire up that grill and have a party!

Market to Table

Ingredients:

  • Container of Arugula (Rocket) approx. 3 cups
  • 4 oz. package of Goat Cheese or Feta
  • 1 Medium Tomato (chopped)
  • 10 Yellow Cherry Tomatoes (halved)
  • 1 Can Baby Corn (cut into bite size pieces)
  • 3 Banana Peppers (sliced into rings)

For the Dressing:

  • 1/4 cup freshly squeezed Lemon Juice
  • 1/4 cup of Olive Oil
  • 2 Tbsp. Dried Chives
  • Cracked Black Pepper
  • Kosher Salt (to taste)

Directions:

In a bowl combine the tomatoes, corn and banana pepper rings.  Meanwhile mix up the dressing and pour over the veggies in the bowl.  Set aside.  Line each salad plate with 1/2 cup arugula.  Place about 1/2 cup of veggies and dressing mixture on top of arugula. Sprinkle some crumbles of feta or goat cheese and serve!  Easy!
